best chicken ever

Isn’t it a nice feeling when someone says that you make the best ever dish – even something simple – it is a truly great compliment for anyone who loves to cook. These nuggets of chicken are great for adding to wraps, on a salad, in a crusty baguette and would probably make a pretty nice pizza topping too. The idea is to throw some flour and seasoning in a bag and then shake the chopped chicken around in it. I like to use the plastic bags that i put my fruit and veg in from the supermarket – they are strong enough to handle a bit of shaking and allow you to get a second use for your plastic bag. I guess if I was truly an eco-warrior I wouldn’t get a plastic bag to start with would I? This seasoning mix also makes awesome wedges if you shake some chopped potato round in it before baking on a greased tray.

Serves 4

2 chicken breasts chopped into bite sized pieces

2 heaped tablespoons of flour

1 tsp ground cumin

1 tsp oregano or mixed herbs

1 tsp paprika

chilli powder if you like spicy things

1 tsp chicken stock powder

salt and pepper

oil for frying

Add all the dry ingredients into a plastic bag and shake to combine, throw in the chopped chicken and shake around until everything is nicely coated. Fry chicken in a hot pan until golden all over and cooked through – the best part is that you have to keep testing bits to check if they are done, and then also testing them for seasoning and then perhaps also testing them to see if they are cool enough to serve!

    Hayley you are a ledgend. I love getting these little ideas and have used several. This Chicken one will be another. Misty Loves chicken salad type dishes in the summer I’m sure she will be really impressed if I can get them looking half as cool as yours.
